Rocky's Squirrel Stew

I've got herds of these things around my place. Finally a use for them. [Well not THOSE things exactly but animals very much like them.] Found this on the web ....

SQUIRREL STEW
Prep Time:3 hours Cooking Time:2 hours Servings:2-3

Recipe Coments [sic]: Severed [sic] with biscuit for a hardy [sic] meal.

Recipe Instructions: Wash dressed squirrel thoroughly and dice into bite size peices [sic]. Combine vinegar, onion, salt, and pepper in deep container. Add squirrel and enough water to cover. Let stand 3 hours.

Sit on porch, restring banjo, learn 'Foggy Mountain Breakdown' [Earl's part]. Use your other tooth as a pick.

Remove squirrel and place in a roasting pan, brown in 375ºF oven. Add seasoned salt, celery leaves, carrots, and potatoes. Again cover with water. Cover pan and continue cooking until tender.

Ingredients:

* 2 squirrels [diced, mind you]
* 1 cup vinegar
* 1 onion, diced
* 3/4 teaspoon salt
* 1/2 teaspoon pepper
* 1 1/2 season salt
* leaves from 3 stalks celery
* 4 carrots, diced
* 4-12 red potatoes (depending on size)

Five hours for two squirrels is a bit much. Can't you just toss them on the barbee? Yum.
